From Our Chef’s Kitchen: Magic Soup

As Executive Chef Samir Labriny unveils his winter menu, we are reminded that food magically nourishes both the body and soul. We welcome the colder months when they are accompanied by Samir’s “Magic Soup”, which resembles a classic French Soup du Legumes. Samir emphasizes the healing properties of this velvety blend of nutritious root vegetables, which you may find served as one of his daily specials. He recalls the origin of this recipe, taking us on a journey back to his mother’s kitchen in Morocco. Samir and his six siblings were not fond of vegetables, so his mother disguised the ingredients in her “magic soup” so her children could benefit from the nutrients in this dish. Samir is quick to share this magical cup of comfort with residents, family, and team members alike with a comforting cup of magic soup to cure winter ailments. Ingredients:

2 Leeks

1 Yellow Onion

1 Turnip

4 Carrots

2 Potatoes

2 Tomatoes

1 Head of Celery Root, peeled

4 Cloves of Garlic

4 tbsp Fresh Parsley

2 tbsp Oregano

4 cups Chicken or Vegetable Stock

4 Tbsp Olive Oil

Salt and fresh cracked black pepper to taste

¼ cup Heavy Cream optional

 

Recipe Preparation: 

  • Sauté leeks, onion, and garlic
  • Add turnip, carrots, potatoes, tomatoes, celery root, and parsley
  • Add stock and boil until vegetables are soft
  • Add olive oil, season with salt and black pepper
  • When cooled, puree
  • Optional Add cream
